Better question: Which brand is best? I only have experience with Kikkoman and La Choy, and I definitely prefer Kikkoman of the two. I am thinking of picking up some dark soy sauce the next time I go to the Asian market so that I can make some hong shao rou.

Whites generally don't like eating plain rice
Whites use forks, so adding soy sauce and killing the ability to eat it with chop sticks doesn't affect them much

For me the main appeal has been using it sparingly while sauteing chicken. It is more tolerable when cooked down because of how it reduces. I literally have zero fucking idea why anyone would ever use it on a finished meal though, uncooked soy sauce is disgusting.

If you like Kikkoman because its thick and salty than stick with that. Yamasa is a little thinner and less salty. I cant fucking stand the shit and I only have it in my trucks medical box since Yamasa doesn't make a small size portable soy sauce.

Yamasa also makes little packets of soy sauce, I've only seen those in Korean buffet take out places so those might be only sold wholesale. They're the same size as the packets of fake soy sauce and duck sauce that are thrown into Chinese take out bags.

Fun fact, Kikkoman is dark, it's just also Nippon where dark is equivalent to a Chink light. For dark though, Pearl River Bridge. Lee Kum Kee as well as Pearl make excellent lights for cheap, but imo Pearls dark is much better.

Actually try out one of their lights, you can buy a big bottle of it for less than a tiny bottle of Kikko, and honestly I think I slightly prefer the Chink lights.
