I'm pescetarian, it's pretty healthy. I don't have to worry about b12 or other deficiencies as much, it's easier. I've been trying to go vegan for a few years, and I try to minimize animal products, but I can seem to make any more progress for long before I'm eating eggs/cheese/sardines. There are benefits to just eating more whole grains/fruits/vegetables and still eating animal products in moderation too. And there are still problems associated with plant farming. The high quality protein isn't something that should be ignored because there are benefits to eating it in moderation in a healthy diet. This is hilarious. Objective morality is impossible to prove or disprove. Inter-subjective morality is both practical and easily proved with Occam's Razor.

For example: Murder is Wrong. This is a universally agreed upon statement among individuals because it serves as a buffer for the protection of subjective consciousness. Therefore, to say murder is not wrong is to say it's okay for someone to murder me, and that's a difficult leap in logic for most. The entire argument against this statement are specific cherry picked rationalizations to justify how murder may be right in certain situations. The statement "murder is wrong" in general is a priori reasoning, because it is self evident. You aren't saying protecting is wrong, you aren't saying death is wrong, you're specifically saying that the act of one sentient being terminating another is wrong, which implies wrongness by association.

Then therefore, because intersubjective critique and a priori reasoning can provide meaningful uncomplicated results for the mechanism of morality via Occam's Razor, to say objective morality doesn't exist is a posteriori reasoning because it requires a significant burden of proof that reason can't provide alone. You can't override people's natural impulse on simple statements without context, because it says something fundamental about humanity; we all think we're intrinsically good people. In order for someone to rationalize their "goodness" they need to have an innate concept of goodness, and this is the intersubjective morality, which may as well be objective, because the absolute form of morality is unknowable based on the subjective limits of human conciousness.

I value humans more than animals. I also think that becoming healthier body-wise can also help some people become healthier ethics-wise. The crucial statistic missing from this conversation is what is exactly is the proportion of people who get sick on a vegan diet. Would 95% of people be fine on it? Or is it way less than that? Is it just people not being diligent enough to make sure their nutrition intake and absorption is good enough? I have the impression this is a concern that applies to veganism more than other diets.
A vegan diet shouldn't be recommended to people who're too inept to be able to be healthy on it. And about 20% of people are below 90 IQ. It's okay to be gradual anon. Do you eat a lot of processed/shitty foods? I would say start by eliminating those, it'll change your palate and you will likely enjoy veggies more on their own.

Eating leaner meats (poultry for example) will also be a good (and healthier) change to make, as well as looking for and incorporating vegetables that provide the umami that meat tends to give to you. Legumes and mushrooms as well as tomatoes are good sources just off the top of my head.

Otherwise and overall, the best way to adjust to any sort of dietary change is gradually. I taught myself to like mushrooms by starting with mushroom broth, then incorporating finely minced mushrooms into my dishes, then working my way from there at my comfort. I worked similarly with raw tomatoes.

Hope this helps to whatever capacity. Remember, your health is the most important thing, so if you are seriously considering going vegetable based then make sure that you are hitting not only your macro goals but your micro goals as well.

Additionally, I'd suggest looking into vegetable medley-type dishes: if you like indian cooking then curries are a great way to eat vegetarian, and a go-to for me is vegetable chili. If you don't like eating vegetables without meat then just put so many vegetables together that you can't tell that there isn't meat. Those umami veggies I spoke of earlier will help greatly with this endeavor.

It's important to make the ethical eating diet as inclusive as we can. The more inclusive it is, the more people can be convinced to follow. It should be obvious that to achieve maximum results in changing humanity's way of living toward being more ethical and sustainable you should take every advantage you can get.
Denying oysters from people considering but not convinced to switch to a vegan diet would be foolish.
