Croquettes are godly. I'm always too lazy to prepare them. Twice baked are good. An easy appetizer is to slice a baked potato, and melt a semi soft cheese like muenster on top using a flat iron or hot plate.

My go-to "wow factor" if I want to have an easy side that I can plate in an impressive manner is garlic mashed potatoes (bonus points if you can use the purple ones and not make it look gross) served from a pastry bag.

I totally agree with you on that, which is why I said I'm too lazy. I just wish they were more common in my country (US). They're quite common in France and Belgium as a side or appetizer. The ones I make at home are quite simple, really. Kind of like potato hush puppies with cheese, since I use corn meal. Still, fucking amazing.
