So I've started making clarified butter, and I'm wondering what I can do with the leftover milk solids instead of throwing them out. What does /ck/ do with them?

I have no idea but I wanted to add that clarified butter is great for grilled cheese sandwiches and adding to popcorn, so basically situations where you don't want the butter to burn OR you don't want the water content of butter that's not yet been clarified.

I buy mine in a jar already made tho :(

Instead of adding it popcorn after it's popped, try popping the popcorn in clarified butter. Best popcorn you'll ever taste.

My Indian cookbook has a recipe using them, but the milk solids are from whole milk. It might still work with yours.

Don't add the salt in the recipe if you used salted butter to make the clarified butter though, because the solids will be really salty. You can pretty much throw it into any saucy curry dish though, it just tastes like a sour dairy product.
