I had Dogfishhead's Chocolate Lobster beer on tap a year or two ago. They actually use the water leftover from boiling lobsters in their restaurant. I've had half a dozen oyster stouts that I really enjoyed, the the lobster was pretty fucking out there, especially combined with chocolate.

In no particular order, look into Eastlake, Enki, Surly, Summit (of course,) and Bauhaus. Check their websites for details an hours, as they can vary wildly for festivals and whatnot.

Don't forget a couple can of the local swill: GB Premium or Nordeast. Damned fine for what they are.

dude, chill. we live in a state that has over 200 separate breweries. bell's just hasn't released anything that has piqued my interest since the planetary series. and most of what they have released, it's usually insanely overpriced (ie hopslam) or there's a better and cheaper version from another brewer. either way, bell's and founders (our two flagship breweries) have reached a point where they're competing not on a state level, but nationwide. there are people in texas that are clamoring for oberon, and people in california that can't wait for the next KBS release.

and you haven't shown me evidence to the contrary to what i said about bell's not taking risks. all of those beers were mostly double or BBA versions of beers they've already produced. except for the last one, which is probably unavailable outside of their taproom.

Honey's fine and probably preferable (for taste) except for the cost. Maybe try boiling the bread before adding in yeast? Pretty sure that's what's done with beer wort to release more sugars from the grain. Also look into "specific gravity" (approximation of sugar content of wort based on its density) and see how you can manipulate that (start googling, I really don't know much about this) along with your yeast to get a higher abv. I'd treat the rye bread as more of a flavoring for your beer than the main sugar for fermentation as well

Regarding the bread, it seems to be following my cooking process closely already:

- Boil water, Take off the boil and add burned to a crisp rye bread (and a few raisins for good measure)

-Strain off the yeast a few times and chill
