I hope you're not wasting food anon. Do you compost or make stocks out of scraps? Avoid buying produce stored in plastic (salad mixes, packed herbs)?

Starter question: when you slice bell peppers, do you excise the white parts or leave them in?

I don't use bell peppers, I use jalapenos or another pepper with some spice to it.

Stock yes, compost no. Scraps that are not suitable for stock get thrown outside and nature takes care of it (I live out in the country)

As a general rule I try to avoid any food product that comes in boxes or bags. Pic related is what I try to buy whenever possible.

As for the white parts of peppers, it depends on what I'm making. For bell peppers I usually remove it. For spicy peppers I leave it in since that's where a lot of the heat is.

You from the south? It's cellery, onion, carrot. I only swap in bell pepper if making gumbo or something.

It's not about "more" flavor it's about the correct flavor to suit the dish. "More" isn't always better.

Well sure, the so-called "holy trinity" is for cajun cooking. I certainly wouldn't use it for Italian, French, etc. But it's a must-have for gumbo, jambalaya, etc. I don't care for green peppers all that much. Most of the time I'd rather have red. But red doesn't taste right in gumbo, jambalaya, dirty rice, etc.
