Yeah, his autism is his biggest flaw. He tries to make everything as un-fuckable as possible, but that often makes them more complicated than they actually need to be and discourages people from trying at all.

The good thing is that he always explains WHY he does what he did, so when you get experienced and knowledgeable enough that you know what is essential and what is his autism, he gets much better. And if you're not smart enough to be able to separate those things, then you're the kind of person that needs his autism.

That's my favorite part of this board lol, the autists who have no idea wtf they're talking about. So only a 3 starred chef of 20 years can judge a shitty cooking reality show but are the autists are qualified to judge other people's cooking on here? It's some hilariously deluded appeal to authority but only when they think it should apply. Hilariously stupid.

There's some basis to that. A Michelin star chef obviously has certain credentials so I don't think it's unreasonable to expect to be judged by someone with similar credentials. People on here are retarded hobbyists, so it's okay that they're judged by other retarded hobbyists.

amateur
etymology: latin via french amator, meaning to perform an action out of love.
in the 18th century, it was applied mainly to sports and it wasn't derogatory. an english lord didn't need to complete for prizes, but probaly spent more time rowing or golfing than a "pro."

in the context of judging a tasting contest, chefs are not professional food tasters, they are professional chefs. tasting is a skill, but that's not what they're paid to do. the guy with the $10 million tongue insurance who samples dreyer's ice cream every morning is a professional taster.

Well yes. The problem with cooking is that you don't really get degrees in it, so your work history is the only way you can build credentials, and even then, there are very few measures of telling the quality of a restaurant if you've never eaten there.

>He tries to make everything as un-fuckable as possible, but that often makes them more complicated than they actually need to be and discourages people from trying at all.

No, it doesn't. Creating idiot-proof recipes is actually very appealing to a lot of people. A large part of AB's fanbase are people who thought cooking was intimidating until they saw how simple the Good Eats recipes were and understood why each step was performed.

In fact, the sous-vide and Instant Pot(TM) movements are each examples of this: it's idiot-proof cooking for people who are too unsure of themselves to use the stovetop like a grown up.

What AB, sous vide, and Instant Pots offer is the safe space of repeatable outcomes regardless of the competency of the cook involved. That's an awfully big value proposition to an awfully big population.

go re-read the thread and AB's bio. he did work briefly as a line cook after finishing culinary school. that is legit credential that he was trained to cook food.

Your 9 year old retard is not the author of multiple cook books that are among the best selling in the category. Alton Brown is. His books were published because the recipes were good, his show was popular because his recipes were good, and people buy his books because the recipes are good.

AB was not just a paid actor. He wrote, directed, and produced Good Eats. He used his background from film to curate Good Eats to be exactly the show he wanted it to be, with as few compromises as possible.

His awards are the outcome of being good at what he does: teaching people how to cook by showing them why and how recipes were created.

You can squabble over whether or not AB is "universally respected" but it's pretty hard to find a hater that isn't just jealous of his success and/or butthurt that Good Eats removed a lot the gatekeeping around cooking good food for a lot of people

but the method itself wasn't all that complicated. It was literally just thaw the turkey, dry it, season it, and then fry it.

The only complexity was when he tried to demonstrate a "safe" way to lower a turkey into the oil. He even prefaced that segment with a little quip about how it might be overkill. It really was just an attempt to offer a solution to an avoidable problem: people were burning themselves and their property when attempting to deep fry a turkey. It's not a mandatory part of the recipe, so it's unfair to act like it is.

That's exactly what I was discussing. His silly method was actually more dangerous than just fucking lowering it in there by hand.

He should have focused on just telling people make sure the turkey was properly thawed and DRY before putting it in the oil.

how? it removed the person lowering the turkey from close proximity to oil that could easily boil over onto an open flame. that makes it safer for the person.

And if you watched the episode, AB did actually warn people to make sure the bird was thawed and dry. He also stressed the importance of measuring how much oil is used.
