Long time in da bidniz has made handwashing so ingrained I don't even realize I'm doing it. But you're correct, in so far as your hands are clean-ish (i.e.: not fresh from the shitter or similar.) Cooking kills most of whatever you may have on your hands.

So? It's still a decent delivery vehicle for 2,4-dithiapentane (Monini is the best supermarket brand olive oil, small praise perhaps ... but it's quite good). Which is as valid an ingredient as MSG and Vanillin. Only morons dismiss ingredients out of hand for emotional reasons.

I prefer it not having any real truffle, rather than just throwing in a couple percent while 2,4-dithiapentane still delivers all the real flavour. Like with Tetsuya's truffle salt for instance.
