Sweat some onions and a tiny bit of garlic in a pan, add in the ground beef until it cooks. Then add just a small amount of mashed potato - just a quarter cup or so for a skilletful, and instant works fine - and a little bit of cheese of your liking, salt and pepper.

Let it cool, and then roll a couple tablespoons at a time into a spring roll wrapper (you can get this at any asian grocer). You can get a cylinder shape by putting some filling at the bottom and then pulling the sides over, then rolling straight (like a burrito). Once you've got them all rolled, you can pan-fry them or bake them in the oven. You know have North African-style bourek, the most simple ground beef filled side dish. You can replace the filling with anything else you would like (chicken and mushroom with bechamel, shrimp, lamb, etc).
