If I see a recipe for 4 people, and I want to scale it down for 2 people, how do I do that?

I was thinking "just halve the ingredients" but something is telling me this isn't correct, because in my brainlet mind, halving things such as herbs/spices, and liquids/broths etc wouldn't have the same impact on the flavor.

>> No.10657981

The ratio is the same for all ingredients, so what is being halved doesn't matter.

Halving is correct.

And you should never follow recipes verbatim for things like seasoning or herbs anyway. Ingredients vary in flavor and potency. Aways taste and adjust accordingly.

>> No.10658046

Halving can result in consequences when the portions get too small do to rapid evaporation (shit gets dry and/or burns), or increase batch size dramatically meaning it doesn't evaporate or get as thick as you expect. But typically it isn't an issue if you're making a dinner portion of something like a stew in a normal vessel.

Sometimes halving a recipe only works if you use half-sized utensils. For instance, if the recipe calls for a 12" skillet, you should use a 6" skillet.

Goes without saying. I didn't want to spoonfeed everything to OP with a tiny spoon.

You can usually just halve the ingredients but for things which evaporate (like pasta), you have to do a bit more math.

If recipe scaling is just too difficult for you to comprehend, just make the full recipe and have some leftovers.

Why don't you just make the full batch and save some for left overs?

If they are measurable they can be halved. Only issue is recipes that say something like need 1 egg, which is harder to split, especially if it effects how it cooks. But for the most part just vary for taste.
