every time i cook something in the pan it usually sticks a bit leaving residue. i use oil and i keep the temperature low, and move whatever is in the pan a bit. i've even resorted to putting liquids in like water,wine, and vinegar to make it more malleable and stir it in even though i never intended to make a sauce. what can i do to stop this whole business from happening? i'm not using nonstick pans but it shouldn't be this bad at medium heat. i nearly fucked up my fish because of this; some fibers of the flesh got stuck and wouldn't let go of the surface of the pan. I'm usually more cautious. i'm completely lost in this because it keeps happening. the pan is well oiled too (olive,vegetable, or butter at times)

There's your fucking issue. It's not releasing from the pan, it's just gluing itself. Get the damned oil hot and stop fucking with it until it releases.

The hell are you doing? Stop picking at the food before it releases from the pan. Browning makes it do that on its own.

If you have a stainless steel pan you need to prepare it specially if you want to cook food without sticking (sometimes you may want it to stick a bit, to make a pan sauce for instance)

First you heat the totally empty and clean pan until you can pour in a thimble of water and it wont sizzle and evaporate but slide around the pan like quicksilver (Leidenfrost effect)

Then you wipe the pan totally dry again (very important) and pour in some high heat cooking oil (canola).

Then you bring that oil just up to its smoking point and leave it there for a minute or two.

Then you pour out the excess oil and let the pan cool down to your desired starting temperature (or not at all, like for searing steak)

Wa La, a stainless steel pan that works better than a non-stick teflon pan. You can even make omelettes in it and nothing will stick.
