Some people don't follow recipes because they are idiots.

Other people don't follow recipes because they have a lot of cooking experience and they don't need to follow them; they can rely on either memory or skill instead.

Any to continue: blindly following a recipe verbatim is also a dumb idea. Ingredients vary in size and shape. Cooking times are affected by different pots and pans, differents ovens, and your elevation, and ambient humidity. Spices vary in potency. A cook needs to adjust for those things based on experience and taste testing food during cooking. If you rely on exactly duplicating exactly what a recipe tells you then you're setting yourself up for failure.

i.e. recipe says use "1 tsp chili powder". If you have some 5-year-old McCormick then you're going to need a fuck of a lot more than that. If you have some good fresh stuff from India or similar then you probably need a lot less than 1 tsp. Something that takes 5 minutes to saute on a pro chef's industrial rangetop might take 10 minutes on your shitty apartment's electric stove. Etc.

Most recipes are not built for home use. They are built to impress by adding things that are not needed.
Most recipes take what was simple and turn it into over the top stupidity. French love to take a simple country dish and transform it into an abomination of ego and bling.
