A lot of French cooking, the old-school peasant dishes I mean, has reasonably few and common ingredients.
Coq au vin and such. Or make some roasts. They're pretty easy to make too and you don't have to use a big piece of meat if you're only cooking for yourself.
Go to the library and get a book with French country cooking recipes maybe.

I dont know what you consider exotic but pumpkin cream soup is easy to make and tastes great. Cook it with a Hokkaido pumpkin so you dont have to peel it

Back off the carbs, lardboy

Try eating something green once in a while. You can steam or oven-roast nearly any vegetable, it takes no effort at all and just a bit of salt and oil.

Roast is a good thing, especially if you have a slow-cooker. Throw a chunk of meat and some veg in your slow cooker with a bit of broth or water and seasoning and let it cook all day, come back to it when you're hungry.

Ffs stop eating pasta and potatoes.
