Why the FUCK is it so hard to find the ingredients for Chinese or Japanese cooking?

It’s all getting used up by Chinese and Japanese people. Seaweed isn’t particularly valuable in the US so it’s marked for export, same with soy beans, dried bait fish, etc. it’s funny because a lot of what they eat is actually coming from the US and Canada. I’ve struggled with it too, Ivan ramens recipe for dashi lists 7 different types of dried smoked fish and none of them could be found excluding dashi and oddly Tokyo Kombu.
