As far as I know there's never really an occasionto cook with liquor. Wine is very useful though.

I prepared some grits with beer instead of water once. It was pretty good, will probably try again sometime.

Adding a splash of liquor to sauces can help bring out more flavors without altering it too much, since some flavors are only soluble in alcohol. Penne alla vodka being one common example. It's more common in desserts though.

Also I read on here a long time ago that someone's trick to making good pancakes was to add a little vodka because it helped keep the gluten from forming too much, which kept the pancakes soft and tender. Not sure if it actually works though.

My parents weren't exactly teetotalers by any means but there was never any alcohol in the house unless there were people over so I never really developed a taste for it with meals or cooking. Didn't save me from spending my 30's as a drunk though.

don't cook with an overly bitter beer (like an IPA) as it will cook down and become a very prominent and overpowering flavor. though i did do a brine with an experimental batch of All Day IPA which was aged in spent barrels used to make Blis Blast. second strangest beer i've ever had.
