These days I mostly just eat sweet potatoes, corn, rice with some fried vegetables mixed in, oats and fruit for breakfast with soy milk, all of that expensive ass mock meat is unnecessary, If your vegan you don't need to model your diet to make it look like you eat meat by eating a "steak" that's made out of condensed soybeans.

As for vegan food try this.

1 table spoon of Baking soda.
some flour
some sugar
water

Add equal part sugar and flour in a bowl with a table spoon of baking soda (not heaped), don't add too much or you'll be able to taste it when it's done.

Mix in water until you have a dough.

Grease a cake/bread tin and pour in the dough.

set to 180 degree for about 40 minutes. (don't forget to preheat before your start.)

Done. easy simple vegan bread. If you want you can also add blue berries and vanilla essence to make it fancy but you don't have to.

I make a decent potato and leek soup that's pretty all right. Sweat leeks, garlic, carrot, potato or turnips (or hell, add beans at the end), celery, and maybe some mushrooms for a few minutes with salt and pepper, then add water or vegetable stock or both and simmer until the turnip and carrots are tender. Top with chives. So simple but it tastes amazing and will warm you up on the coldest of days.

I like dal a lot. Can make it god tier by doing a 2 minute tadka at the end ; https://www.vegrecipesofindia.com/restaurant-style-dal-tadka/.. I also highly recommend the masoor dal (red lentils). Most delicious lentil and also happens to have the highest protein content I believe.

Traditionally eaten with rice but I prefer it as a soup, adjust water ratio as necessary.

most vegans don't really eat any of the stuff on the left side very often and think of them like tendies/other processed foods. some people eat them occasionally. i've personally tried most of these and they're almost all garbage, but in very very recent times, vegan dairy has gotten better. see: miyoko's, which replicates the chemical processes that occur in real cheese making, although it's still very expensive/"in beta" right now. cashew cheese is also easy to make at home and pretty good. Kite Hill and Tofutti makes some great cream cheese that has reasonable good adoption at bagel stores.

I haven't had any vegan meat substitutes that were any good, but maybe that's because I've never tried meat in the first place, since other people seem to like them.

i've found the articles on http://seriouseats.com/the-vegan-experience to be pretty informative (I like when he improves on western foods with eastern techniques/ingredients and vice-versa) and the recipes delicious. philosophy against meat substitutes is good too.

for real cookbooks, the most common one I see is Americas Test Kitchen Vegan edition.

But you may be better off picking the cuisine you want to try (Chinese, Mexican, etc.) and buying a regular cookbook that includes vegetable recipes. There's usually a lot of vegan recipes or almost-vegan recipes (replace oyster sauce with veg. oyster sauce, ghee with oil, etc.). Also look for sources from traditionally vegetarian/vegan cuisines like vegetarian Indian books or Shojin Ryori Japanese food (basically Buddhist monastery food).
