Alright Americans, Brits, and Canadians. What's the deal with mac and cheese?
Why is it so prevalent and such a big deal for Anglos?
Tastes like a whole lot of nothing, even with stronger cheeses.
Easy to make I'll give it that, but really, why?

You're absolutely making it wrong if it tastes like nothing.

Start with a bechamel, stir in 2-3 types of cheese that fit your preference, and season well salt, pepper, mustard (or mustard powder), and give it some heat with paprika or cayenne. I like mine baked for a little crunch, and you can top with a little panko if you really want to emphasize the crispiness. Boxed brands are garbage, end of story.

Mac and cheese is so rich and heavy that it's an infrequent indulgence, but it's great when done right.

the advent of Kraft Dinner (not just mac and cheese, but the concept of packaging a serving of macaroni and a pouch of dry cheese concentrate) made it very easy to prepare, so a lot of harried parents who don't feel like cooking real food for their dipshit brats would make a lot of KD for their kids. Kids like it because it's fairly inoffensive, but has a hint of sweetness, and it's a "fun" food because of the stranding of the cheese.

As such it's become a nostalgic item, so sometimes adults will get it to experience their youth again, or do meme out over what they think an idylic youth would have been had their mom fed then Kraft Dinner

That's a fine looking mac, I make mine from scratch to. I use onions, peppers, and celery with aduiville sausage with some Cajun seasonings I buy off the shelf. For cheese I like sharp cheddar and ghost pepper jack, for a little heat.

Anyone who says it's bland is crazy and never had it made properly.
