Can I get some tips on making chicken carbonara, /ck/? The recipe looks simple enough but I might still fuck something up.

You can't really make carbonara without a fatty pork product like bacon/pancetta/guanciale.

You need the rendered fat for flavor, and to keep the eggy sauce from coagulating. Something lean like chicken just won't work right.

Some parts of the chicken are pretty fatty (thighs for example) but it's the wrong kind of fat for carbonara, and will just turn out greasy and disgusting. There's a reason a tried and true formula has already been whittled down to an exact science 1000 years ago and hasn't changed. I don't think OP is going to improve on it with some garbage perversion he grabbed off of allrecipes.com on a whim between anime masturbation sessions.

Use more yolk than whites.

Add a little pasta water to prevent drying out.

No cream.

Lots of pepper and salt the egg mixture.

Use good parmigiano.

Use spaghetti.

If you're using good pork and cheese in the recipe, the only salt that should be needed is in the pasta water. I couldn't imagine adding salt to my egg mixture when I make carbonara, it'd be way too salty.
