It really does look like an overcooked omelette. Don't get me wrong, I don't use carcinogenic nonstick so I cook my omelettes in stainless and sometimes fuck them up.

I always thought it's just oyster sauce, warmed. But this recipe I googled seems more correct, with that hint of sherry.

near the place I used to live, the marukai had alternating food stands on different days. Okonomiyaki day was like Wednesday and Sunday but I missed it everytime. Got everything else though. Taiyaki is disgusting, roasted chestnuts are also gross, takoyaki is actually pretty good but would have been great without the mustard
