Why the fuck would you be driving around 12 tons of melted chocolate in the first place? Why not transport it in solid form? Was it tempered chocolate? Would a truck like this really have sophisticated enough equipment to hold tons of melted chocolate precisely in the 88-90 F range that it needs to be held at to keep a temper? Wouldn't it be more convenient to just ship it in solids blocks, then melt and re-temper on site?

Just a wild guess, but it's easier to transport it melted than to transport it in solid form and re heat it.
Liquids are much easier to work with than solids from an engineering point of view.
It's probably cheaper to keep it melted than to re-melt it too.

I actually think it's the other way around. We already have millions of rectangular shipping containers/transport trailers, seems like it would be trivial to just make a shitload if 5kilo bars and atafk em up inside then drive it wherever, especially since melted chocolate has to have a heated tanker associated with it to maintain the proper temp for it to stay in liuid form. feels like a large attempt to solve a problem that isn't actually there.

I don't work in food but I work with chemicals and I can promise you there's plenty of tank trucks with all kinds of heating and temperature control systems, and it's much easier to work with liquids than it is with solids. I would much rather pump the truck full and pump it out at its destination than have to mold the chocolate into solid bars or chunks and then have to have it packaged up and loaded onto a truck and then unloaded at the destination and melted.

but there's so much more than just "temperature control" involved with melted chocolate; you have to like steam jacket the entire fucking tanker because all of the chocolate has to stay at EXACTLY the right temperature range or else you fucked up and the receiving company has to re-temper the whole batch and you just wasted extra money on a liquid tanker for no reason. plus it has to be atirred somehow because it's way more viscous than what I presume are any of the chemicals you've worked with since there are a ton of fats and possibly milk products that need to remain evenly Incorporated in the liquid form.

My guess is that if it were solid they would need to pay for packaging. Wrappers, plastic bags, cardboard boxes, etc. Shipping dry goods can lead to complications. Warehouses aren't always sanitary. Boxes get crushed. Contents spill. They can melt in the wrappers. Etc.

My guess is that by shipping it this way it's more sanitary, costs less to transport, less room for human error. As for keeping the tanker properly heated, I have no idea.

Here's how I'd do it: Inside the tanker there's mechanical stirring involved, to keep both composition and temperature homogenous. And the tanker has an outer enveloppe that is filled with heated water kept at the desired temperature with a thermostat. The whole thing is further insulated.
