I was worried the heat from the meal would wilt the salad. I'm still working out personal plating styles I like and dislike. I could have done something more deconstructed with a bigger plate, but I'm not trying to work for Alinea. I like more homey plating but associated with something that could be 2-3 courses on another restaurant. All of my food tastes good together, whichever parts your choose to eat that forkful, and that is emphasized by my one plate notion
