In beans, stocks, and soups they are wonderful. Idk about just eating a ham-hock by itself. It's kinda fatty, even though some meat is on it and usually used for the above mentioned.

boil one in a pot of water with some garlic and when it starts to pull apart add in some green beans and cook till they are tender. Or throw it in a pot of Great Northern Beans with some garlic. It's also good in greens of all kinds.
