Whenever I try and cook stir-fry's for myself I get diarrhea. What am I doing wrong?

Not adding enough oil. Fiber and Oil are your body's way of making thick turds, the kind that slide right out. Use about 4 tablespoons of oil next time.

First step is to cook something aromatic in the oil to get a base of flavor. Good choices are fermented chili bean paste (doubanjiang), fermented black beans (douchi), or even something as simple as garlic or dried chilies. Do that for a few seconds. When it's good and aromatic then get your meat in. You cook the meat first so you brown it. You don't want it just "cooked", you want it colored. Color = caramelization & malliard reaction = flavor. Veggies in last. And if you're using frozen veggies make sure you thawed them first.

peanut oil is one of the best. it has a high smoke point which is very important when cooking on high heat. great flavor too. some people like coconut oil but the flavor is awful for most stir fries.

high smoke point is important because you're using super high heat. Thus butter is a not a good choice. I use either peanut oil or lard. any other cooking oil with a high smoke point would work. you could use grapeseed, canola (though personally I don't like the taste), refined or "light" olive oil, etc.

oh, you could use clarified butter or ghee, just not normal butter.
