They both have their merits. I like drums because they have a lot of healthy cartilage (dat crunch though). Flats on the other hand are tastier because of their high skin to meat ratio. I usually request a 50:50 mix, sometimes opting for more flats than drums.

Flats.

I like the strip of fat on the one side and the crispy skin to tear on the other side. The meat is more tender than a drum. Because they're flat they pick up sauce better.
