I want to learn about cheese.

Cheeses I like:

Cheddar
Wensleydale
Camembert
Applewood
Mozzerella
Ricotta
Parmesan
Halloumi

What are some other great cheeses out there? I'm not a big fan of the super mouldy stuff, I was in France once and they showed me a cheese plate that had actual maggots crawling on it.
