I don't know what would make money in which town, which would ultimately be what you should do when running a restaurant, but I'd be most happy making a bistro or some other small menu restaurant like in a small Inn just so I could make my seasonal menu whims that week. Inn at Little Washington being the inspiration for things I love to eat, or a Floribbean fusion such as Chef Allen or Norman Van Aken did for years in Miami.

I've actually thought about shit like this, except it would be more B&B style, without the actual sleepover shit. It would be done out of home and just host families for homestyle meals for a couple extra dollars on the side. Let them reserve a date and time, give you a list of allergies and food preferences, then go to town preparing them a feast to save them cooking time and give them a chance to just relax and enjoy a home-cooked meal.

A simple a la carte steakhouse. Each meal includes a meat, a potato dish, and a salad.

Meats include a New York strip, ribeye, Cajun ribeye, T-Bone pork chop, or half a roasted chicken. Maybe add a fish option to the menu if it's in demand.

Potato dishes include french fries, baked potato, or potato salad.

Salads include...well three varieties of salad. Some research would be in good order.

Oh and I'll have a little freezer for ice cream by the door. Everyone grabs the ice cream treat of their choice on their way out.

There's actually a great little restaurant in my town that does just that. I'm not sure what the term for it is though. Each meal is multi-course and takes a few hours to get through. It's a very social experience with the people around you. There's always a particular theme ingredient to the meal, however.
