Have you guys ever made candy? I've been getting into making taffy and caramel candies and I find it really fun, and my friends enjoy the stuff I make and have been really supporting me.

Do marshmallows count as candy? They're fun to make, and I like to do them near the cold months, to float on top of a hot chocolate, sometimes vanilla, sometimes minty flavored. Very similarly, I love a meringue kisses, if they count. I like crushed corn flake and mini chocolate chips, or pecan meringue kisses.

Penuche, pistachio/pepita brittle, and pecan pralines are the limits of my desire to make candy usually. I sometimes will simmer some citrus peels in simple syrup if I'm using the fruits for other recipes.

Sometimes I make sea foam candy, also called honeycomb or sponge candy. Crunchie is easily available on Amazon now, so that fulfills that craving just fine but if you have a sil-pat and a thermometer, there's nothing easier than pouring out some foamy sugar.

Because some recipes lets you use a tiny amount of honey, you can use a rare varietal flavored honey local to you, and vary the flavor, from orange blossom to key lime, from avocado honey or my absolute favorite, lychee honey (good luck finding it!). I have also used birch syrup, maple for flavor. Some people dip the honeycomb in chocolate, but that's optional.
