My GF can’t eat anything I’m good at making because muh carbs. Pic related is what most of her meals look like, bacon, meat, and eggs and combinations thereof. What low carb dishes does /ck/ like to make?

Most of my meals are carb free or light not because of a diet, it's just how I eat. Protein and some veggies.

Do something like pork chops with spicy apple chutney, roasted garlic Brussels sprouts, and Kate or Chard sauteed with bacon.

The solution is just to add vegetables as the core of the diet. More carrots, beans, cabbage, broccoli, peas etc. add a bit of mustard, pepper and butter with maybe a little bit of a sear in the pan and they can be quite tasty.

I make low-cost keto food because I'm a miser. I have a recipe for keto pancakes that I eat everyday except on cuttting days. The main ingredients are:

30g unflavored whey concentrate
60g unflavored soy isolate
50g cheese, grated
100g water
2 eggs

And to make the macros as desired I add:

whatever fat, as needed to get the desired amount of calories, mostly canola oil but also coconut oil and lard
fiber supps like oat fiber, Fibrex, psyllium, as needed to get me enough fiber in my daily diet

Sometimes I add onion.

1) I mix all the ingredients in bowl, then spread onto a frying pan.
2) Set burner to 4, wait 8 minutes
3) Flip over, wait 2 minutes
4) Done

The ratio of 1/3 whey and 2/3 soy is optimal in my opinion. With soy alone the batter was hard to mix together without excessive water that made it too thick and not get cooked in the middle. With whey alone the batter is really gooey and hard to flip. With this ratio it seems just right. The eggs make the thing hold together. It's definitely better with lots of fat added in. Putting lard on the pan and spreading the batter over it will create the best tasting crust.

It's not all that tasty on its own which is why I also make some avocado spread to go with it. Its ingredients are:

1 avocado
10-30g canola oil
1g salt
3g potassium chloride

1) I scoop avocado into a small bowl with a spoon, if it's not ripe enough to be spooned easily, it needs to chopped into small pieces. Add the rest of the stuff into the bowl too.
2) ! blend them with a hand blender

The best spread I've made so far had some Gouda Pesto cheese grated into it that made it amazing. Also, optionally, the amount of spread can be increased by adding water and psyllium, this dilutes the taste of course. Otherwise, you just gotta add a second avocado to get a greater quantity, the avocado can only hold about 30g oil, anymore will start oozing out of the blended spread.

Today we had caesar salad and salmon. Then later chicken wings. You can make egg salad or deviled eggs, jalapenos with cream cheese wrapped in bacon. I'm starting to really hate bacon though. I also made shitty cheesecake cupcakes with erythritol.
