It's pretty good. I end up using this one more, since it's more focused on the sort of recipes I look up.

Food Lab is better for meat and pasta dishes, while NBR is better for baking and desserts, i.e the sorts of things I'm more likely to use an actual recipe for.

I've got this one from the same publishers
https://www.amazon.com/Cooks-Illustrated-Cookbook-Americas-Magazine/dp/1933615893/ref=sr_1_1/130-4003198-6910060?ie=UTF8&qid=1524413489&sr=8-1&keywords=cooks+illustrated+cookbook

Actually making a Risotto Primavera out of it tonight. Really like it, plus there are a lot of tips and explanations why things work or don't work. It's kinda like cooking with Alton Brown

It's fabulous and has a great structure and great explanations for its arguments.

Plus it's a great setpiece/conversation piece for your kitchen because Kenji has such a cult following.

Nearly all of the "science" stuff were already covered by McGee and others' books.

The recipes are okay but not excellent.

It nonetheless is a feat compiling and condensing core "food science" knowledge into one well-organized book.

Is there a reason to use something else instead of my 40 year old copy of better homes and gardens?
