It's pretty good. I end up using this one more, since it's more focused on the sort of recipes I look up.

Food Lab is better for meat and pasta dishes, while NBR is better for baking and desserts, i.e the sorts of things I'm more likely to use an actual recipe for.

Actually making a Risotto Primavera out of it tonight. Really like it, plus there are a lot of tips and explanations why things work or don't work. It's kinda like cooking with Alton Brown

Nearly all of the "science" stuff were already covered by McGee and others' books.

The recipes are okay but not excellent.

It nonetheless is a feat compiling and condensing core "food science" knowledge into one well-organized book.

Local Bread is a really good bread book for recipes. Tartine Bread or flour water salt yeast is good for technique.
