make a nice ragu sauce

cook the beef in olive oil until it's nice and brown, remove from the pan. chop up a medium onion, two carrots and two celery stalks and add to the pan drippings with enough olive oil to almost cover. cook em on medium high until nice and brown. then add tomato paste and stock and the beef and simmer for 2-3 hours until it tastes good. skim the fat as you go. if you really feel crazy add a pinch of nutmeg or a cinnamon stick to the sauce
