Yeh we do get sole here, it's not that common and it's usually imported from New Zealand.
We get flounder but i don't think it's that popular, I used to catch heaps of them up the Tassie east coast. I went camping for 2 weeks and pretty much lived on flounder the whole time.

Would a chippy also be a place where you would order pies, and mash? In America we have places called fish camps which pretty much do the same things as fish, and chip shops, but also have things like crab, oyster etc.

Not in Australia it isn't.
I like just plain salt and a slice of lemon so I can squeeze juice onto some things a a bit of tartare sauce on the side.
Some plebs prefer chicken salt.
