Sometimes you want a thick sauce, sometimes a thin one. Sometimes a sticky one that can be caramelized. Different tools for different jobs.

I like tabasco for: making beef tartare, reconstituting Colman's mustard (powder), and for seasoning gumbo while I am cooking it. I don't use it as a condiment.
