If I’m working or it’s for guests then fuck yeah I wanna make it look nice and use garnishes and shit cause it’s about the entire experience then.

If I’m going out I expect them to care about presentation insofar as I’m paying them to. One of my favorite food memories was going to momofuku noodle bar at like midnight completely smashed and watching how delicately and with what care and precision the expediter wiped each plate and added the garnishes.

If it’s just for me or a close friend I’ve cooked for before then fuck it you’re getting my slop on a plate and you’re gonna love it as much as I do cause it’s my slop.

true, but it still shows the importance of good presentation. it doesn't have to be ridiculous pretentious bullshit out of a place that should appear in Sex In The City, but if you serve someone a plate of gray-brown mush, they're going to think it tastes as bad as it looks. even if it ends up being so delicious it overrides that, it's still probably going to be more memorable as "particularly tasty vomit" and not "a good fuckin meal"
