First time posting here, and looking to make good use of this board to learn more about cooking. Now, I'm looking for some general advice on cooking hamburgers. Some insight on my situation on where I'm coming from- I just started working in a restaurant a few months with no real cooking experience besides the basics from cooking at home. I started out washing dishes and doing prep work, but the night cook went out for a cigarette after a fallout with the owner and never came back. Next thing I know, I'm now the lunch and dinner cook. It's a traditional american restaurant with mostly everything being made from scratch, most sides are prepped and in a steam table for quick serving, but most dishes will come with something that needs to be cooked on the grill. This is where I need a bit of help.

I work on a flat top grill with the temperature set to 325 F (~160 C). My dilemma is how long should I be cooking the hamburger meat (aprox 7oz), to achieve proper doneness as in rare, medium rare, medium, well done (or burnt, whatever).

One of my coworkers suggested on how they feel when pressing them with the spatulas, but it doesn't really do much for me, I rely on how it looks, but sometimes I just don't get it right.

Any advice is welcome on the subject of hamburgers or any other relative food/restaurant information.

A 7 oz burger can be cooked to well in six minutes with the help of a dome at 500
For me, seeing how the patty reacts. The firmer it is, the more well it is. Don't squash burgers going mid rare to medium because the juice will steam the party up one doneness level.

How do you cook a hamburger?
Don't press it with the spatula. DRY as FUCK
How do you know when its cooked?
Press it gently with your finger. Assuming your beef is unfrozen, you will learn how springy it is based on its doneness.

Well done will resist you and spring back.
Raw will squish.
Everything else is somewhere in between. There is no guaranteed time as your plaque will fluctuate in temperate as you cook. Frankly I would turn it up higher.

I live in Canada. We cannot serve burgers anything but well done (by law), so they are always cooked to shit. I hate cooking hamburgers and the only reason I serve them is for trashy american tourists (sorry).

Honestly, its a pretty sad process. They get charred on the grill and then I keep them in hot water on the warm side of my grill. When they get ordered I just fucken destroy them in the oven and cover it in pretentious shit. I really hate these fucking burgers but chef won't have it any other way. It's a $20 burger btw and I don't temp them. I don't temp any of my meat cause I know when its cooked. Those burgers are cooked my dude

Burgers are not what they are in america: we don't have as many large burger chains and they're not as popular beyond the regular fast food fare

as I said in my earlier post, we only serve burgers for american tourists who are apprehensive of things like duck or scallops
