This one is from Ramsay.
Slice and saute one onion and one braeburn apple in butter. When the onion is translucent and a bit yellow (but not brown) then add 1 tb flour and cook about 1 min. Then add 1 cup chicken stock and 1 cup hard cider. Simmer a bit to reduce. Puree it. Add 1 tb grain mustard, salt and pepper to taste.

I've made it many times, it tastes great.
