this works for basically any peppers you have.

>>put the lid on your jar and leave everything for a week or 2-3, some people do it shorter, some longer

the brine might get cloudy/whitish, which is good. your lactobacillus culture is having a party.

use common sense if, you see weird ass mould or it smells off throw it, food poisoning is not worth it.

but what about botulism? don't worry this is safer than canning, the bad guys don't survive in high salt conditions and the lactobacills fuck shit up even more by making lactic acid which makes your ferment absolutely inhospitable to dangerous bacteria.

you can also ferment some bellpeppers to dilute the hotness. or just grow some balls and enjoy the heat

be careful about adding non fermented stuff later on. don't dilute the salt concentration too much.

but it had me wondering: what do people do with things like carolina reapers and the like? Those are many times hotter than birds eye peppers. Using just a tiny piece of them just gets you the hotness and not the flavour of the pepper.

My current favorite is probably pic related. Typically I hate sauces that use extracts to bump up the heat, but these guys somehow did it in a non-terrible way. Plenty of extra heat piled on to a traditional Habanero sauce.

I have a bottle of that. It's actually one of the weaker extracts though. That doesn't mean it won't burn your fucking face off, but you can get hotter shit easily.

That being said, I had a bottle of that and my dad and I decided to each put a generous portion on burritos and see who could finish first without a drink.
