RMS = root mean square
you use RMS voltage when doing math to calculate power and whatnot. It's the AC equivalent that you can plug into the DC math and get accurate results.

Good DMMs have a feature called True RMS, which actually samples the waveform shape and integrates it. These shitty DMMs just assume the waveform is a perfect cosine.

Peak is just the peak voltage, as in the maximum amplitude. Peak reads way higher than RMS in a sinusoid (I believe the conversion factor is 1/sqrt(2) to convert peak to RMS)
