I've never had a good Poutine outside of Quebec. they all use the wrong type of cheese, because the type of cheese we use isn't very prolific outside of quebec since it's literally the runoff trash curds from making other cheese

i usually see mozzarella used for it instead because fuckers just see white cheese and assume AH ITS SOME MOZZA, LIKE ON MY 'ZA -- it's shit because it melts too much and at too low a temperature and becomes a stringy mess in the gravy (of which there is usually too much) and particularly dumb motherfuckers use SHREDDED cheese which is just asking for trouble. also, usually not think enough fries. a real fries n steamies place will keep two types of fries, thin ones for normal mcdos style plain salted fries to be served with hot dogs, and nice thick cut ones for use in poutine

we use cheese curds and it's good because the bits of cheese stay fairly firm and only the outside melts.

and speaking of cheap fries and hot dog places, ive never seen a Steamie outside of quebec. here in quebec, we steam the hot dog buns briefly instead of toasting them or serving them uncooked. it results in a much softer bread, but the bread is also hot. we also typically put coleslaw on hot dogs, or at least shredded pickled cabbage. it's good shit but i never see it anywhere else

The trick is eat it with savory salty foods and the creamy flavor just seems to come onto its own. I can eat a whole plate of these plain with some soysauce, and there's nothing as decadent and delicious in the morning as a bowl of roast duck porridge and pi dan (century eggs), see pic.

Mulukhieh is a dish known in the middle east and some african countries. The color comes from the jute mallow plant either fresh or powder to which you add oil, meat (beef or rabbit) and spices. You eat it with bread.
It looks pretty gross though but so delicious. It greasy too so you eat a small portion only, also it tastes best when you eat it the day after it's made.
