I already have a pressure cooker and I just feel that I can do the same stuff with that. I can go high heat and pressurised of course but I can also go low heat with pressure on or off or take the lid off entirely.

The countries that were specified were;
Colombia, Indonesia, Iran, Thailand, and Mexico.
Thailand is pretty tourist-friendly and certain parts of Mexico are too.

If you shop around for a good deal or are even open to hanging around the airport and buying in on a sudden opening on a flight to God-knows-where you can travel for very little money.
As was brought up sarcastically already, the hole-in-wall places will feed you cheaply, but you could also just buy some bread and cheese at a store and make a meal of that instead of insisting on eating in restaurants. No harm in slumming it a little if you're out to have an adventure.
You can get a LOT of travel experience for a thousand dollars if you don't insist on queen-sized beds and lobster dinners.
Hell, stay in a multi-person room at a hostel and get to know people. Don't be such a stuck up pussy.

Add stuff at separate times. Meat and root veggies at the same time at the start. Softer veg at 4-6 hours. Spices in the last hour. If you cook everything the full 8 you lose lots of flavour.

Same principle as stews done normally really. A slow cooker will probably give you more tender meat, but there isn't really any other advantages besides being able to leave it.
I love my slow cooker, but no matter what you do, it's never going to produce meals as good as if you had taken the time to make whatever properly.
