U.S. food standards has them remove the naturally protective coating on the shell, which is why we refrigerate them. Yuros don't have to refrigerate, which is a fucking blessing because that makes cooking faster and easier.
Personally, I don't refrigerate my eggs anyway. I'm certainly not eating them raw.

The key is get the raw egg in while the rice is still very hot like right off the stove and mix it before it cools. The heat is all you need to kill bacteria and by health standards, basic food prep stated a temperature of 165f for 5-12 seconds. Check it out if you don't believe me but "pasturized eggs" are just eggs washed really good. Try to heat sanitize and you'll fuck it up. The shell is pretty air tight and you'd be surprised how safe they can actually be raw. Problem is is Americans buy everything in bulk because we believe bigger is bette. Most places buy as they need or only a few days at a time. Sunny side up and soft boiled eggs aren't much different and salmonella is a very heat sensitive bacteria so high heat for literally just a few seconds is all that's needed to kill it. It only takes 115f to sanitize your hands anything over 120f can scald your skin. Most food only has to be heated to the standard 165f on any food thermometer for a few seconds to kill off harmful bacteria and if there is something still in the food after it's because the food or cooking surface is contaminated. What do you think french beef tartar is?
