My mom cant cook, my dad does though. There's one comfort food meal he used to make us when he was in a hurry that I still eat to this day. Its called RMT, which stands for rice-meat-tomato. You basically just combine a pound of hamburger (with the fat poured off after cooking) with a cup of rice, a can of Campbell tomato soup, and two can-fulls of water (along with salt and pepper to taste).

The result is a dish which, with a little work, can be made into anything. Want italian? Add garlic, a little oil, and parm. Want mexican? Throw in beans, onion, and cumin. Want continental? Add paprika and a bit of nutmeg and you have a bastard goulash that would make the Hungarians furious.

It also serves well on its own, with a family favorite being to eat it with sweet corn or sugar-snap peas.

That is my last meal.

Mom's greasy hamburgers, her beef stew made with commodity ingredients, her fried bread. God, the chicken and dumplings. And the biscuits. She could throw together homemade biscuits in nothing flat and nothing has ever compared. We'd have them almost every morning growing up. Yep, she puts up sugar crowders every year, from the farmers market or a local farmer, way better than shit you can buy in the store. When she makes liver she pan fries it, adds onions until they sear and caramelized it, then makes gravy and simmers the liver in it for a bit. My mom is a... simple cook. But my favorite thing she made frequently was to slice yesterday's baked potatoes into triangles and brown them in a pan with butter and onions. I don't know what it was about it, maybe lots of salt and of course the butter, but this was the best shit ever. Salty, crispy, buttery potato bites. Super soft due to being baked, but oddly still firm. Heavily browned exterior, but never burnt black. Caramelized onions ALL OVER THAT. So simple, so fucking tasty.
