I'll read several recipes for a dish to get the basic ratio of ingredients needed, and then just kind of treat that like a reference range of acceptable measurements and eyeball it all.

Browning butter or melting things like chocolate over a bain-marie. Also watching baked goods rise in the oven.

Not sure if it fits the thread, but I like cleaning the dishes as soon as I'm done using them.
When I am doing the actual food preparation, and especially immediately after finishing my meal.
The feeling of not having a single thing to clean later on after eating is simply bliss. Dish washer and crowded sinks are a thing of the past.

This. If im making something Ive never tried, i'll read maybe 5-6 recipes. You usually find a common thread between them that defines the dish and use that as a guide to create it. After the first time you make it you recognize mistakes, flaws, or elements you simply dont like and change them. When people say "this is delicious where did you find this recipe?" I get to say "I winged it". Very ego stroking.

I like putting out an end product that looks and tastes great. It's one of the only things that I can do in one sitting that I know most people aren't capable of doing anywhere near as well. (I'm also a professional, but putting up a nice plate of good food is the most rewarding part of the job.)

I really like it when I've got something simmering on the stove.
The longer the simmering the better.

Nothing comfier than a some sort of stew simmering on a Sunday afternoon while I sit on the couch with a beer shit posting on /ck/
