The show was 50% lame, 50% mildly interesting or correct. I never did like his reinvent the wheel reverse engineering nonsense for recipes. I've seen abominations of technique and recipes both on the old show, the one before that, in his magazines, all of them, and on the new Milk Street.
Earnest attempts are not the same thing as consulting with people who can or could teach at the CIA, especially when intro'd with the "Best recipe for..." arrogance. Blooming idiocy again and again. When you present yourself as some kind of exhaustive tome of psuedo- or quasi- scientific chefs, you'd better deliver. Again and again, they don't. It's sport to watch the show and not cringe. The ladies who cook with him on Cook's Country were obviously not Exeter and Columbia grads like him.

No, there aren't that many great mysteries left in food science. They're just schlocking shit to make content week after week. Gadget reviews were okay back in the days of his magazine and probably why most people subscribed, if it wasn't the botanical sketch on the back cover, as were some of the workarounds written in by readers like how to make piecrust not burn using junk from your garage you repurposed, or used a stocking to steep cold brew. We all know these things now anyway, but kids might still find that enjoyable, but their RECIPES ARE CRAP.
