There are some really bad tiramisu's out there, anon, even at good restaurants. Good ones are firmly alcoholic and so not sold in restaurants. Good ones deflate quickly so aren't really sold in stores or restaurants without some adulteration to keep it from flattening. Marscapone isn't readily available in every market in the world and expensive just because, so there are substitutions, think egg whites and cream cheese. Think cool whip. Is it the right cake? Light spongecake? Sometimes not, and it's sweetened cake making it too rich. And, the fine chocolate shavings on top shouldn't just be cocoa instead. What's nice about a good tiramisu is that it's a vehicle for a little bit of liqueur and sweetness without being cloyingly sweet nor heavy after a filling meal.

There's the chocolat elayer crunch, then there's the smooth mascarpone, preferably with a bit of lemon zest in it, and then you have the cake part which is supposed to fall apart - but you can deliberately make is a tough kind of mushy if you want to add texture.

You can vary it a bit. Cocoa + cinnamom is great but some medium rough chocolate shavings over that can add some nice texture. Also, I tried adding a layer of chocolate right over the cocoa, and it worked and wasn't half bad.

My mom taught me how to make tiramisu when I turned 16: make espresso, add equal parts marsala to said espresso and yourself. Then add a bit more. It's very, very hard to overbooze a tiramisu unless you go 1:1 booze:espresso, and not just marsala and grappa work, but bourbon and cognac too.

Sweet I agree with, but you can offset that with a bit of lemon juice and zest in the mascarpone, to sort of hide it. A good tiramisu is heavy though, and makes you want to unbuckle your belt, relax for half an hour, and then grab another piece because it's just so damn good.

When you deviate from the tiramisu recipe this much, it's simply a different dessert, I feel. Most turkish desserts I've ever had were disappointing. Turkish delight was especially awfull to me, and baklava? Papery pastry drowned in syrup, no other taste than sugar. So sweet it made my teeth tingle.

Tried a greek dessert that looks like ramen noodles in syrup and it was basically the same.

Had a good baklava once, though, from an Azerbaijani roommate during student exchange. That guy was an annoying prick and I hated him, but the baklava he brought from a visit home was excellent. Much different from the turkish one, not dripping with syrup, but with plenty of soft filling of finely crushed nuts and pistacchios, very flavourful with pronounced nut taste and not overly sweet.

rate my first attempt at boston cream pie, was my first time making pastry cream and chocolate ganache, obviously could have done without using all the pastry cream and letting the chocolate set more in the fridge before pouring but it set well once in the fridge for a few hours.

Tasted pretty good ngl,
