So I just got home from having Easter dinner with my family. They let me take the turkey carcass and I want to use it for soup, but I probably wont get the chance to do it until later this week or possibly the weekend. Do these things freeze well?

You can freeze a carcass for months and the stock turns out fine, just recognize that anything used to make the stock will not make it to the plate. Either the cook eats it or it goes in the bin.

I’ve never successfully made stock from a turkey carcass, and I’d assume it’s because of the brine. Comes out a disgusting salty mess. Anyone else know this feel?

I freeze chicken bones all the time, it takes me about three weeks to have enough bones to fill my pressure cooker for stock. They freeze well.

Turkey stock isn't that useful though, other than for turkey. Simmer those bones, add some bought breast meat, poach, cube it up, add veggies, serve open faced on toast, or make piecrust, and make some homemade turkey pot pies.

Make a very thick stew with mirepoix, meat, and peas (usually cream-based if it's poultry or fish). Put it in flaky crust. Bake.
