Hello to everyone. Tonight I make classic Indian Mumbai dish name of pav bhaji. This literally means bread and vegetables. Please follow along and watch if you wish.

yeah, there are some brands of 'pav bhaji' masala. Everest is good brand. If hard to find, at least there is always online stores. Otherwise, you can basically use garam masala, chili powder, turmeric, and a bit of mango powder (or maybe a splash of vinegar for touch of sourness).

Not pictured is i put oil in a pot and put in some cumin seeds, cinnamon stick, and a few cloves. After a few minutes, I add the onion and cook down.

You can make your own masala. It's a lot of fennel seeds, coriander seed and cumin toasted with moderate amount of black pepper and chili and a little clove, black cardamom, star anise and half a cinnamon stick. Let cool and grind up with turmeric, ground ginger and nutmeg Gives a really good result and doesn't leave you dependent on a particular brand.

Well, most is eyeballed to be honest.

One thing to note is that tomatos in india are fresh almost all year round, so you have that nice deep red color that I think in states you only get in summar from local farms.

Many pav bhajis in videos online are also red because many vendors put extra chili powder, beet juice, or even red food dye.

Depending on how heavy you go with the butter/ghee you can get enough acid in the final result by going heavy on the tomatoes, and blowing off the amchur. But I'll agree if you like it really rich you need the amchur.
