I've seen restaurants like this on tv shows like Restaurant Paradise where they serve a ton of food like your pic above and the customers are lined up around the block. Most of these places have been doing ot for decades so it's definitely a workable model. I don't understand why more places don't do this. It's basically a formula for success. Instead restaurants going out of business is the norm instead of the exception. Especially if a restaurant knows it's going out of business if they don't turn things around, why wouldn't you try this instead of closing up.
