Meme adide, Montreal smoked meat, its like Canadian Pastrami. Its beef i know, but they are brined, smoked, then they are placed in steamers for serving, and cut to order. So if it was pork, it would pretty much be steamed ham. Look up Montreal smoked meat.

I do it in a crockpot all day. The fat rendering into a grease in the bottom makes a great gravy if you add a splash of cream. You need to seal it with foil though or youll end up with a dry unpleasent pork roast.
