This guy's >>10253243 idea is the best in the thread so far. I suggest a stew. Marinate the entire lamb leg in your choice of acid, enzyme, or alcohol along with aromatics. I suggest red wine and a little bit of apple cider vinegar along with garlic, onions, shallots and rosemary for a full 24 hours in the fridge. Take it out and cut it into chunks. If you have a long bone, keep it for marrow, any small bones make stock with. Sear the chunks of meat and then place them in a pot you sweated/caramelized/seared onions, garlic, parsnip, celery, carrots in with bacon fat or other pork fat. Duck fat also works. Deglaze with a little bit or red wine or dark malty beer. Start stewing. At some point add in you veggies/seasonings/fresh herbs. I suggest red potatos with skins on quarters and rinsed of starch. Parsnips. 1 small sweet potato orange. 1 small sweet potato purple. Peeled. More onions if your into that kind of thing. Big hunks of carrot. Seasoning wise I'd say some chili flakes, sage, basil, a bay leaf, rosemary, a little tiny bit of oregano. Finish with salt and pepper. Let cool to room temp then store in the fridge for 24 hours. Re heat and serve with a side of roasted vegetables specifically asparagus and brussels sprouts along with soft black bread. Maybe some garlic mashed potatoed I don't know.
