Just got some ground Venison and I have no idea what to make with it. I've never had Venison in general and most people say it can taste pretty bad and I don't want to fuck it up.

Venison is lean. Mix it with some pork lard and make some fennel breakfast sausage.

Seconding this. Made a killer shepherds pie with ground venison. Browned it in beef fat, lots of vegetables, some starch to thicken gravy of broth and red wine, topped with buttery mash potato/parsnips with aged chedder melted on top.
